Ingredients
10–12 oz bag of cauliflower rice
1 1/2 cups cooked quinoa
1 cup panko breadcrumbs
2 eggs
1–2 teaspoons chili powder, to taste
1–2 teaspoons paprika, to taste
1–2 teaspoons cumin, to taste
1 teaspoon salt
olive oil to brush over the top
Directions
  1. Steam the cauliflower rice and cook the quinoa.
  2. Pulse the cauliflower and quinoa in a food processor, transfer mixture to a bowl and combine with all the other ingredients.
  3. Mix and scoop into small balls.
  4. Brush with olive oil and bake in the oven for 20 minutes at 400 F.
