


Mexican Hot Chocolate

1. Add the milk and water to a medium saucepan and place over medium heat.
2. Add the chopped Mexican chocolate and whisk occasionally as the mixture warms, allowing the chocolate to gradually melt into the milk.
3. Once the chocolate has melted, add the cocoa powder, brown sugar, cinnamon, ancho chile powder, and salt.
4. Continue whisking over medium heat until the cocoa and spices are fully incorporated and the drink is hot and smooth. Avoid bringing the mixture to a full boil.
5. Whisk vigorously just before serving to create a light layer of foam on top.
6. Divide between two mugs and serve immediately. Finish with an extra sprinkle of cinnamon or whipped cream, if desired.
