Easter Quiche

Ingredients
1 sheet frozen puff pastry (thawed)
1 tbsp olive oil
2 medium zucchini, thinly sliced
6 large eggs
1/2 cup milk (or half & half for richer texture)
4 oz goat cheese, crumbled
1/2 tsp kosher salt
1/4 tsp black pepper
1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
Directions
  1. Preheat oven to 400°F.
  2. Roll out puff pastry and press into a greased tart pan or pie dish. Trim edges as needed and prick the bottom with a fork.
  3. Pre-bake the crust for 10 minutes, then remove from oven and set aside.
  4. In a skillet, heat olive oil over medium heat. Add sliced zucchini and sauté until softened and lightly golden. Season with salt and pepper.
  5. In a mixing bowl, whisk together eggs, milk, salt, and pepper until fully combined.
  6. Spread sautéed zucchini evenly over the pre-baked crust. Crumble goat cheese on top.
  7. Pour the egg mixture over the filling.
  8. Bake for 30–35 minutes, or until the center is set and the top is lightly golden.
  9. Let cool slightly before slicing. Garnish with fresh herbs if desired and serve warm or at room temperature.
