Easter Quiche

Ingredients
1 sheet frozen puff pastry (thawed)
1 tbsp olive oil
2 medium zucchini, thinly sliced
6 large eggs
1/2 cup milk (or half & half for richer texture)
4 oz goat cheese, crumbled
1/2 tsp kosher salt
1/4 tsp black pepper
1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
Directions
- Preheat oven to 400°F.
- Roll out puff pastry and press into a greased tart pan or pie dish. Trim edges as needed and prick the bottom with a fork.
- Pre-bake the crust for 10 minutes, then remove from oven and set aside.
- In a skillet, heat olive oil over medium heat. Add sliced zucchini and sauté until softened and lightly golden. Season with salt and pepper.
- In a mixing bowl, whisk together eggs, milk, salt, and pepper until fully combined.
- Spread sautéed zucchini evenly over the pre-baked crust. Crumble goat cheese on top.
- Pour the egg mixture over the filling.
- Bake for 30–35 minutes, or until the center is set and the top is lightly golden.
- Let cool slightly before slicing. Garnish with fresh herbs if desired and serve warm or at room temperature.
