Cottage Cheese Egg Bites

Ingredients
6 Large Eggs
1 Cup Cottage Cheese
1/2 Cup Shredded Cheddar Cheese
1/2 Cup Chopped Spinach
1/4 Cup Diced Red Bell Pepper
Salt, to taste
Pepper, to taste
1 Tablespoon Olive Oil
Directions
  1. Preheat your oven to 350 F.
  2. Chop the spinach and red bell pepper, and lightly grease your muffin tin with olive oil. 
  3. In a large bowl, whisk together the eggs, cottage cheese, and cheddar cheese until well combined. Stir in the spinach and red bell pepper. Add salt and pepper to taste. 
  4. Divide the mixture evenly among the muffin cups, filling each about three-quarters full. 
  5. Bake in the preheated oven for 20-25 mintues, or until the egg bites are set and lightly golden on top. 
  6. Allow the egg bites to cool for a few minutes before removing them from the tin. Serve warm or at room temperature. 
  7. Enjoy!
