Cottage Cheese Egg Bites

Ingredients
6 Large Eggs
1 Cup Cottage Cheese
1/2 Cup Shredded Cheddar Cheese
1/2 Cup Chopped Spinach
1/4 Cup Diced Red Bell Pepper
Salt, to taste
Pepper, to taste
1 Tablespoon Olive Oil
Directions
- Preheat your oven to 350 F.
- Chop the spinach and red bell pepper, and lightly grease your muffin tin with olive oil.
- In a large bowl, whisk together the eggs, cottage cheese, and cheddar cheese until well combined. Stir in the spinach and red bell pepper. Add salt and pepper to taste.
- Divide the mixture evenly among the muffin cups, filling each about three-quarters full.
- Bake in the preheated oven for 20-25 mintues, or until the egg bites are set and lightly golden on top.
- Allow the egg bites to cool for a few minutes before removing them from the tin. Serve warm or at room temperature.
