Loaded Guacamole

2-3 Avocados
1/4 Chopped Cilantro
1 Jalapeño, remove seeds and finely chopped
1/4 Cup of Tomato, diced
1/4 Cup of Red Onion, diced
1/2 Can of Corn
1/2 Can of Black Beans
Lime Juice
1/2 tsp. Salt, to taste
Directions
- Prepare your corn and beans. Be sure to drain canned black beans and corn.
- Cut your avocados in half and remove the pits to scoop out the avocado into a bowl. Add lime juice and salt to taste.
- Using a fork or potato masher, mash the avocado to your preferred consistency.
- To your bowl, add the drained beans, corn, diced tomatoes, chopped red onion, minced jalapeño (remove the seeds), and chopped cilantro.
- Stir the ingredients together with a spoon or spatula until well combined. Be careful not to smash the other ingredients.
- Season to your taste. Add more lime juice, salt, or jalapeño to your liking.
- Serve and Enjoy!
