


Pumpkin French Toast

1. Make the whipped pumpkin butter: Add the softened butter to a medium bowl and beat with a hand mixer until light and airy.
2. Add the pumpkin purée, maple syrup, vanilla extract, cinnamon, and pumpkin pie spice. Continue mixing until everything is fully incorporated and the butter has a smooth, fluffy texture. Set aside.
3. Prepare the French toast mixture: In a shallow bowl or baking dish, whisk together the eggs, milk, pumpkin purée, vanilla extract, cinnamon, and pumpkin pie spice.
4. Place a large skillet over medium heat and melt a small amount of butter across the surface.
5. Dip each slice of bread into the pumpkin mixture, turning once so both sides are coated. Let any excess mixture drip off before transferring the bread to the skillet.
6. Cook each slice for approximately 2–3 minutes per side, or until the outside is golden brown and the center is warmed through.
7. Continue cooking the remaining bread, adding additional butter to the skillet as needed.
8. Serve the French toast warm with a generous spoonful of whipped pumpkin butter.
9. Finish with maple syrup and toasted pecans or walnuts, if desired.
