


Easy Taco Protein Bowl

1. Cook the beef:
Heat a skillet over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it apart as it cooks. Drain excess grease if needed.
2. Add taco seasoning:
Stir in the taco seasoning and ¼ cup water. Cook for another 2–3 minutes, until the seasoning is well mixed and the liquid has mostly cooked off.
3. Cook the vegetables:
Heat olive oil in a separate pan. Add your vegetables and cook for 5–7 minutes, until tender. Season with a little salt and pepper.
4. Build your bowl:
Divide the rice between two bowls. Add the seasoned ground beef and vegetables.
5. Add toppings:
Top with cheese, avocado, salsa, Greek yogurt, cilantro, and a squeeze of lime.

Add ½ cup black beans to each bowl for extra protein and fiber.
