Ingredients
4 oz block feta cheese
1–2 thick round slices watermelon
Sea salt, to taste
Black pepper, to taste
1 tablespoon extra virgin olive oil
2 teaspoons balsamic glaze
1 tablespoon chopped fresh mint
1 tablespoon chopped fresh basil
Directions
  1. Slice the feta cheese into cubes about 1 to 1½ inches wide and approximately ¾ inch thick.
  2. Trim the rind from the watermelon and cut the fruit into cubes similar in size to the feta pieces. If needed, slice the cubes horizontally to create evenly sized pieces.
  3. Arrange the watermelon and feta cubes alternately on a serving platter to create a checkerboard-style pattern.
  4. Lightly season with sea salt and black pepper.
  5. Drizzle olive oil and balsamic glaze evenly over the top.
  6. Finish with chopped mint and basil before serving.
  7. Serve immediately, or refrigerate up to 1 day before serving.
