


Easy Mongolian Beef Protein Bowl

1. Cook the rice:
Cook your rice according to the package directions.
2. Cook the beef:
Heat a large skillet over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it up as it cooks. Drain excess grease if needed.
3. Add the vegetables:
Add the broccoli, bell pepper, and 1 tsp oil to the skillet. Cook for 4–5 minutes, stirring occasionally, until the vegetables are tender-crisp.
4. Make the sauce:
In a small bowl, mix together the soy sauce, brown sugar, garlic, ginger, sesame oil, and water. If using cornstarch, whisk it into the sauce until smooth.
5. Combine:
Pour the sauce over the beef and vegetables. Stir and simmer for 2–3 minutes, until the sauce thickens slightly and everything is coated.
6. Build your bowls:
Divide the cooked rice among 4 bowls. Top with the Mongolian beef, broccoli, and peppers.
