Ingredients
1/3 Cup Pure Pumpkin
1 Bag Mini Chocolate Chips, for decorating
1/2 Tsp. Cinnamon
2 Tbsp. Granulated Sugar
1 Tbsp. Powdered Sugar
1/2 Tsp. Pumpkin Pie Spice
4 oz. White Chocolate
1-1/2 Cups Graham Cracker, crumbs
Directions
  1. Melt the white chocolate in your microwave. Set aside for 5-10 minutes until it cools.
  2. In a large bowl, mix together the pure pumpkin, powdered sugar, and pumpkin pie spice to combine. 
  3. Add the melted chocolate and stir to combine. 
  4. Fold in the graham cracker crumbs until you have a thick, soft dough. 
  5. Cover the bowl with plastic wrap and chill the truffle dough for 1-2 hours or until firm enough to scoop and roll. 
  6. In a separate, shallow bowl, mix together granulated sugar and cinnamon to combine.
  7. Once the dough is chilled, scoop 1 tablespoon sized truffles and roll between your hands to create a smooth ball. 
  8. Drop the truffles into the bowl of cinnamon sugar and roll around to coat. 
  9. To decorate your truffles like little pumpkins, use a toothpick to press indents into the sides of the truffle to look like the ridges you find on pumpkins. Press a mini chocolate chip into the top of your truffle for the stem. 
  10. Keep them in the fridge until you serve or Enjoy!
