Cheesy Green Bean Casserole

Ingredients
1 1/2 pounds frozen green beans
1/2 teaspoon sea salt
3 cups cherry tomatoes
1/2 pound fresh mozzarella block
6 large fresh basil leaves
2/3 cup grated parmesan cheese
1/4 cup bread crumbs
3 tablespoons extra-virgin olive oil
Directions
- Preheat to 375 degrees F.
- Thaw and pre-cook the frozen green beans briefly
- Slice basil leaves into long ribbons. Cut the fresh mozzarella into 1 inch pieces.
- In a baking dish combine the casserole ingredients and stir to combine. Sprinkle the topping ingredients over the top (breadcrumbs + parmesan)
- Bake the casserole, covered, for 25 minutes (if green beans are warm) or 40 minutes (if green beans are cold)
- Enjoy!
