With a few simple tips, your next tailgate party will be a winner.

  • Liverwurst Football
  • Black Bean Salsa
  • Pickled Eggs
  • Peanut Burgers
  • Potato Chips

Dip Tip

In a food processor, combine 8 ounces of liverwurst with 2 tablespoons dry white wine, 1 teaspoon dried minced onion, 1/4 teaspoon dried basil, 1/4 teaspoon garlic salt and 1/4 cup butter. Process until smooth; then refrigerate until well chilled. Shape chilled liverwurst mixture into a football shape. Place thin strips of pimientos across the top to simulate laces. Serve at room temperature.

Egg Tip

Pickled eggs make great deviled eggs. Cut the eggs in half and remove the yolks. Mash the yolks and mix with mayonnaise, prepared mustard, salt and pepper. Refill the egg halves. Top the deviled egg halves with black olive slices, if desired.

Burger Tip

To make regular burgers special, finely chop salted peanuts and press into both sides of the burgers, saving some for later. Brush one side of the patties with barbecue sauce and grill, sauce side up. Turn and brush cooked side with barbecue sauce. Top each patty with a slice of cheese and the remaining peanuts. Cook until desired doneness. Place a patty on a toasted hamburger bun half and top with a tomato slice and the other bun half.

Tailgating Tip

In addition to packing the charcoal, safe fire starter and long matches or an all purpose clicker type lighter, be sure to include a spatula, pot holder or mitt and a spray bottle of water for flare ups. Remember that a cooler is designed to keep food cool, not to chill it. Pre-chill both cooler and food before packing. Don't leave food sitting out longer than two hours.
