For the batter:
1 cup First Street Granulated Sugar
2 tbs. First Street Salted Butter
3/4 cup First Street Whole Milk
2 tsp. Baking Powder
1 cup First Street Flour
1/4 tsp. Salt
For the peaches:
6 peaches peeled, cored and sliced (Easy directions below) and 3/4 cup First Street Granulated Sugar
4 cups of First Street Canned Peaches and 1/3 cup First Street Granulated Sugar
4 cups of Frozen First Street Sliced Peaches and 3/4 cup First Street Granulated Sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
Preheat the oven to 350°F. Grease a 9 x 13 pan with butter (or non-stick cooking spray).
Batter: Cream together sugar, butter & milk in a medium sized mixing bowl. Add baking powder, flour & salt, mix until combined. Pour/scoop the mix into the pan making sure it is fairly even across the bottom of the pan.
Peaches: Put the peaches and sugar in a saucepan and bring to a boil, stirring regularly so that they don’t stick. As soon as they reach boiling point, pull off the flames and pour the peaches over the batter in the pan. Sprinkle cinnamon and nutmeg over the fruit.
Bake for 30-45 minutes until golden brown. This recipe is delicious served with First Street Vanilla Ice Cream or fresh whipped First Street cream.
How to peel ripe peaches easily: Boil a pot of water and lower the peaches into the pot. Leave them in the water for 30 seconds, and then remove them putting them straight into an ice-water bath. The ice water bath will stop the fruit form cooking but will leave the skin ready to peel of with your fingers. If this doesn’t work, then peel you peaches the regular way with a knife as the peaches are probably are not ripe enough.
