Week 3: Turkey Sausage Pasta & Rice Bowls
Start your new year right! Give yourself the gift of organization and time buy preparing your weekly meals ahead of time! These two meals can be prepared easily in one cooking session leaving your weeknights free to go to the gym, spend time with family or to stay true to any other resolution you may have made!
1 package of La Romanella Farfalle
2 packages Turkey Sausages
2 packages of spinach
1 bottle of Sun Harvest Organic Extra Virgin Olive Oil
1 jar of La Romanella Shredded Parmesan Cheese
1 bag of First Street Brown Rice
1 jar/bag of red pepper flakes
8 Microwavable Food Storage Containers
Turkey Sausage Pasta Ingredients
8 ounces of La Romanella Farfalle
4 turkey sausage links
1 bag of Spinach
1 tablespoon extra-virgin olive oil
1 cup parmesan cheese, shredded, divided
Cook pasta according to the package instructions. Drain and put aside.
Meanwhile, in a large skillet over high heat add 1/2 tablespoon of olive oil and cook the sausage until brown and cooked through, about 5-7 minutes, turning every few minutes to brown. Remove the sausage from the pan.
Next add the remaining 1/2 tablespoon of olive oil to the pan and add in the swiss chard. Cook, stirring occasionally until the spinach reduces, about 4 minutes (sometimes I add in a few tablespoons of the pasta water if the pan seems to dry).
Mix pasta, sausage, and spinach together and divide mixture between the 4 containers.
Top each container with 1/4 cup of parmesan cheese.
Put a lid on each container and shake it a couple of times to mix everything. Store in the refrigerator and enjoy within a week.
Turkey Sausage Bowl Ingredients
2 cups cooked brown rice or whole grain rice
1 tablespoon olive oil
12 ounces turkey Italian sausage, casings removed
1/2 teaspoon crushed red pepper flakes
1 bag (6 oz) baby spinach
1/4 cup Parmigiano-Reggiano cheese
Add oil to a large skillet and bring to medium heat. Add sausage and Crushed Red Pepper Flakes and cook until sausage is browned. Break sausage into crumbles with a wooden spoon. Add red pepper flakes and stir to combine.
Add spinach, cook about 30 seconds until spinach begins to wilt.
Add cooked rice and toss with spinach and sausage to combine.
Divide evenly into 4 containers and allow to cool.
Sprinkle with cheese once cold.
