Mascarpone Berry Brownie Pizza
So simple and so very pretty! You can mix up the toppings as you like – strawberries, roasted almonds and a drizzle of chocolate, or raspberries with salted caramel. Make it unique and indulgent!
For the Brownie Crust
2 tbsp Ambiance Cold Brew Coffee Concentrate
1 tbsp water
2 large First Street eggs
1/2 cup First Street 100% Pure Canola Oil
3 3/4 cups First Street Brownie Mix
For the Mascarpone Frosting
1 (8 oz) block First Street Cream Cheese
4 oz mascarpone cheese
2 tbsp First Street Powdered Sugar
1 tsp First Street Pure Vanilla Extract
Pinch of First Street salt
2 cups mixed fresh berries (strawberries, raspberries, blackberries, blueberries)
Preheat the oven to 325ºF. Grease 10-inch tart pan with a removable bottom and set aside.
In a mixing bowl, whisk together the cold brew, water, eggs and oil. Add the brownie mix and use a rubber spatula to mix until the batter is smooth. Pour the brownie batter into the tart pan and spread evenly. Bake for 25 minutes or until a cake tester inserted into the center of the brownie comes out clean.
Let the brownie cool slightly, then remove the tart pan ring, leaving the brownie on the bottom of the pan. Cool completely before frosting.
For the Frosting, using an electric mixer, beat together the cream cheese, mascarpone cheese, powdered sugar, vanilla and salt until smooth and fluffy – about 3 minutes.
To assemble the pizza, spread the mascarpone cream onto the brownie crust, leaving a 1-inch border around the edge. Top with fresh berries.
