Lemon Curd Gift Jar
2 1/2 cups First Street Granulated Cane Sugar
1/2 cup lemon zest
1 cup First Street 100% Lemon Juice
3/4 cup First Street Salted Butter Grade AA
7 First Street Large egg yolks
4 First Street Large whole eggs
Wash 4 half-pint canning jars with warm, soapy water. Rinse well; keep hot in a boiling pan of water until you are ready to fill them. Bring a small pot of water with the flat lids in it to a boil and leave it just boiling.
Grate the lemon zest off two of the lemons. In a small, heavy bottom pot over medium heat, whisk together the egg yolks. Add the sugar and the butter (cut into small chunks), along with the lemon juice and zest. Stir continuously for 10-15 minutes with a wooden spoon, changing the heat as needed to make sure it doesn’t boil. Put straight into canning jars and seal with hot lids and bands immediately.
How to test if it’s ready: If you're not sure if your curd is ready yet, you can test it by putting 1/2 teaspoon of the curd on a cool plate. Within a minute it should set up to a thick consistency a little thicker than a custard.
Note: Stirring continuously is important to ensure you don’t end up with small pieces of scrambled egg in your lemon curd!
Wrap jar with a ribbon and add the gift tag.
