Fresh Green Beans

Ingredients:

For the green beans:

3 lbs. fresh green beans, with just the tips removed

12-16 oz fresh mushrooms cleaned and quartered

For the sauce:

6 tbs. First Street Salted Butter

1 cup fresh mushrooms thinly sliced

2 shallots diced

1 clove of diced garlic

1/2 cup First Street All Purpose Flour

2 cups First Street Heavy Whipping Cream or First Street Milk

1/2 tsp. First Street Whole Thyme

Salt & Pepper

For the crispy onion strips topping:

1 large sweet onion

2 Sun Harvest Large Eggs

1/3 cup First Street Whole Milk

3/4 cup First Street All Purpose Flour

1/4 tsp. First Street Paprika

1/4 tsp. First Street Garlic Powder

1/2 tsp. salt

1/8 tsp. pepper

1 1/2 cups First Street Panko Japanese Style Bread Crumbs

1 cup First Street Canola oil for frying

Directions:

Prepare the sauce and onion rings first, putting the beans on to steam 10 minutes before you are ready to serve.

The sauce: Sauté sliced mushrooms and diced shallots in butter, add a clove of diced garlic until fragrant, add flour to make a roux, then cream or milk which will make the sauce like a soupy gravy. Season with S&P and thyme to taste.

Crispy onion strips: Slice the onion and cut into quarters. Separate the pieces into strips. Mix together the eggs and milk with an electric beater or a whisk until combined. In a different bowl, stir together the flour, salt, paprika, pepper, garlic powder, and salt. Set aside. Put the panko crumbs in a shallow bowl or pie dish.

Bread the onion pieces by coating them in flour, then the egg wash and then in the panko. Put the breaded pieces on a plate in a single layer. Once all the pieces are ready, heat 1.5 inches of oil over medium heat. Fry a handful of pieces at a time until golden brown. Each batch should take about 1.5 - 2 minutes of frying. Let the pieces cool on paper towels.

The beans: Steam the green beans and mushrooms in a steamer basket until the beans are al-dente

Plate the beans (either onto individual plates or into a large serving dish), pour the sauce over the beans and then arrange the onion pieces on top. Serve Immediately.
