Brilliant for skirt steak, flank steak and pork.
1 cup Ambiance Cold Brew Coffee
2 garlic cloves, minced
1/4 cup balsamic vinegar
1/4 cup Dijon mustard
3 tablespoons light brown sugar
2 tablespoons La Romanella Extra-Virgin olive oil
1 tablespoon soy sauce
1 teaspoon freshly ground black pepper
1 1/2 pounds skirt steak
Combine the Cold Brew Coffee, garlic, vinegar, Dijon, brown sugar, olive oil, soy sauce and pepper in a mixing bowl. Pour half of the marinade into a resealable plastic bag and add the steak, seal bag, and turn to coat. Let sit at room temperature 1 hour. Cover remaining marinade and set aside.
Prepare grill for medium-high heat. Remove steak from marinade; discard used marinade. Season steak with salt and pepper and grill, turning and basting often with reserved marinade, 8–10 minutes for medium-rare. Let rest 10 minutes before slicing.
