Green Apple Monsters
Trick or treat them with these apple monsters. You can use green or red apples as a heathy Halloween treat.
2 Granny Smith Apples
Juice of 1 lemon
8 tsp. First Street Creamy Peanut Butter
¼ cup Sunflower seed kernels
½ cup Sun Harvest Semi-Sweet Chocolate Chips
Chop the apples into quarters and cut off the core. Cut a wedge out of the center of each apple quarter. Brush lemon juice on all apple surfaces, except the skin. Cut the strawberries into slices. Put 1 tsp. of peanut butter in the back of space where you cut out the wedge. Press the sunflower seed kernels into the upper side of the open wedge space. Add one slice of strawberry in the middle of the wedge, pressing it into the peanut putter at the back to make it stick.
For the eyes, melt the dark chocolate in a double boiler or in a ceramic cup in a pot with water. Once melted, take a tooth pick and put a small dollop of chocolate on the bottom of the mint, then press the mint onto the top of the apple slice, do the same for the other eye. Then with the toothpick, put a small dot of chocolate on the mint to add the pupil.
Makes 8 Green Apple Monsters.
