For an easy sweet and sour sauce for the meatballs, combine 1/4 cup each of catsup, sugar and vinegar in a saucepan. Add 1 cup of water and bring to a boil. Thicken the sauce by first mixing 2 tablespoons of cornstarch with 2 tablespoons of cold water until cornstarch is dissolved. Pour into hot catsup mixture and stir until thickened. Pour over meatballs and toss. Pineapple chunks can also be tossed with the meatballs. This will cover about 100 bite size meatballs.
After slicing and coring apples, dip each wedge into lemon juice to prevent them from turning brown. To get the most juice from a lemon, roll it on the counter top with the palm of you hand applying pressure.
Try using a red bell pepper as a dip holder. Cut off the non-stem end of a pepper and hollow out, removing as much of the core and seeds as possible. Fill to the top with the dip. Arrange individual vegetable groups around the pepper. Accent the arrangement with cherry tomatoes in several spots.
Planning the menu and the quantities is important. A varied menu with a beef item, chicken item, fish item and cheese will provide something for all your guests. The fresh vegetables will allow even dieters to enjoy the food. When figuring quantities, allow about two "bites" per item per person per hour.
